Easy Potato Cups Recipe - Bite-Sized Delight for Every Occasion
Ingredients:
Potato Cups:
- 1 kg Potatoes
- 1 teaspoon Salt
- 1 tablespoon Unsalted Butter
- Parsley (to taste)
- 100g Mozzarella Cheese
Meat Filling:
- 1 Medium Onion, Diced
- 3 Garlic Cloves
- 450g Ground Beef
- 1 teaspoon Salt
- 1 teaspoon Sweet Paprika
- 1 Generous Pinch of Black Pepper
- 200g Tomato Sauce
Instructions:
1. Prepare the Potato Cups:
- Peel and chop the potatoes into dices.
- Place the diced potatoes in a saucepan and add enough water to cover them.
- Add 1 teaspoon of salt and boil the potatoes for about 15 minutes or until they are tender.
- Drain the water and transfer the cooked potatoes to a bowl.
- Add the unsalted butter and parsley to taste, then mash the potatoes until you have a smooth puree.
- Divide the potato mixture into 4 equal parts.
- Shape each part into a ball and make a well in the center of each ball, creating a scoop-like shape.
- Transfer these 4 potato cups to a baking dish.
2. Prepare the Meat Filling:
- In a skillet over medium-low heat, add a drizzle of olive oil.
- Add the diced onion and crushed garlic cloves, and stir until they become golden brown.
- Add the ground beef and stir until all the meat juices have evaporated.
- Season the meat with 1 teaspoon of salt, sweet paprika, and a pinch of black pepper.
- Add the tomato sauce and stir all the ingredients well for 2 minutes.
- Set aside the meat filling.
3. Assemble and Bake:
- Preheat your oven to 180°C (356°F).
- Take the potato cups and evenly distribute 50g of grated mozzarella cheese into each of them.
- Add 1 tablespoon of the prepared meat filling into each potato cup.
- Sprinkle another 50g of grated mozzarella cheese evenly over the filled potato cups.
- Place the baking dish with the filled potato cups in the preheated oven.
- Bake for 10 minutes or until the cheese is melted and golden.
4. Serve:
- Remove the potato cups from the oven and serve.
