Ingredients
- 1 pack of ramen noodles
- 2 cups of water
- 1 tablespoon of sesame oil
- 2 cloves of garlic, minced
- 1/2 teaspoon of grated ginger
- 2 cups of vegetable broth
- 1 tablespoon of soy sauce
- 1 teaspoon of miso paste
- 1 green onion, sliced
- 1/4 cup of sliced mushrooms
- 1 egg
- Fresh cilantro or sliced chili peppers for garnish (optional)
Steps
1. In a large pot, bring 2 cups of water to a boil.2. Add 1 pack of ramen noodles and cook for 2 minutes or until al dente. Drain and set aside.
3. In the same pot, heat 1 tablespoon of sesame oil over medium heat.
4. Add 2 cloves of garlic and 1/2 teaspoon of grated ginger. Sauté until fragrant, about
1 minute.
5. Add 2 cups of vegetable broth, 1 tablespoon of soy sauce, and 1 teaspoon of miso paste.
Bring to a simmer.
6. Add cooked ramen noodles, 1 sliced green onion, and 1/4 cup of sliced mushrooms.
Cook for 2 minutes.
7. In a separate small saucepan, heat 1 teaspoon of sesame oil over medium heat.
8. Add 1 egg and cook sunny side up or to your preferred doneness.
9. Serve the ramen soup in a bowl, topped with the cooked egg and garnished with fresh
cilantro or sliced chili peppers (optional). Enjoy!
