Creamy Chicken with Baby Potatoes and Broccoli Recipe - Comfort Food Made Easy


Ingredients for 3 Portions:

- 3 medium chicken breasts (approximately 120g each)

- Baby potatoes (250g per portion)

- 30g self-raising flour

- Spinach

- 3 tablespoons olive oil

- 1/2 onion

- Broccoli (added at the end)


Seasonings:

- Garlic

- Paprika

- Salt

- Pepper

- Mixed herbs

- Parsley


For the Sauce:

- 80ml double cream

- Water/vegetable stock (preferably chicken but veg works too)

- 30g grated mozzarella


Instructions:


1. Start by preparing the chicken breasts. Season them with garlic, paprika, salt, pepper, mixed herbs, and parsley.

2. Heat 3 tablespoons of olive oil in a pan over medium-high heat. Add the seasoned chicken breasts and cook until they are golden brown and cooked through. Once done, set the chicken aside.

3. In the same pan, add the sliced onion and cook until it becomes translucent.

4. Add the self-raising flour to the pan and stir well to form a roux. Cook for a couple of minutes to remove the raw taste of the flour.

5. Slowly add the double cream and water/vegetable stock (chicken or vegetable) to the roux, stirring continuously to create a smooth and creamy sauce. Adjust the amount of liquid to achieve your desired consistency.

6. Stir in the grated mozzarella cheese until it's fully melted and the sauce is creamy and smooth.

7. Return the cooked chicken breasts to the pan and let them simmer in the sauce for a few minutes.

8. In a separate pot, boil the baby potatoes until they are tender.

9. Steam or blanch the broccoli until it's cooked to your liking. You can add the broccoli to the pan with the chicken and sauce or serve it on the side.

10. Serve the creamy chicken with the baby potatoes, steamed broccoli, and a handful of spinach.
