Delicious Sweet and Spicy Korean Fried Chicken Recipe - Irresistibly Crispy

Ingredients:
- 2 lbs Chicken Pieces
- 1 L of water
- 3 tbsp. salt
- 1.5 cups flour
- 1.5 cups cornstarch
- 2 tsp baking powder
- 2 tbsp fine salt
- 2 tsp fine black pepper
- Water (for wet batter)
- Cooking Oil (for frying)
- Scallions (for garnish)
- 3 tbsp. minced garlic
- 1/3 cup UFC Banana ketchup
- 3 tbsp or more gochujang (Korean red chili paste)
- 1.5 tbsp soy sauce
- 1/8 cup brown sugar
- 1/4 cup water
- 1.5 tbsp vinegar
- 2 tbsp sesame oil
- White and Black Sesame Seeds (for garnish)
Instructions:
1. In a large bowl, dissolve 3 tablespoons of salt in 1 liter of water. Add the chicken pieces to the saltwater mixture, ensuring they are fully submerged. Allow the chicken to brine for at least 30 minutes, but preferably 2 hours for best results. This will help tenderize the chicken and enhance its flavor.
2. While the chicken is brining, prepare the sweet and spicy Korean sauce. In a saucepan, combine the minced garlic, banana ketchup, gochujang, soy sauce, brown sugar, 1/4 cup water, vinegar, and sesame oil. Stir well and simmer over low heat for about 5-7 minutes until the sauce thickens slightly. Adjust the spiciness by adding more gochujang if desired. Set the sauce aside.
3. In a separate mixing bowl, combine the flour, cornstarch, baking powder, fine salt, and fine black pepper. Mix these dry ingredients well.
4. Drain the chicken from the brine and pat it dry with paper towels.
5. Heat cooking oil in a deep frying pan or a deep fryer to 350°F (175°C).
6. While the oil is heating, prepare the wet batter. Gradually add water to the dry flour mixture, stirring until you achieve a smooth batter that is thick enough to coat the back of a spoon.
7. Dip each piece of chicken into the wet batter, allowing any excess to drip off, and then carefully place it into the hot oil. Fry the chicken in batches for about 5-7 minutes or until it's golden brown and crispy. Ensure the chicken is cooked through, with an internal temperature of 165°F (74°C). Drain the fried chicken on a paper towel-lined plate.
8. Once all the chicken pieces are fried, place them in a large mixing bowl.
9. Pour the prepared sweet and spicy Korean sauce over the fried chicken pieces. Gently toss to coat each piece evenly with the sauce.
10. Transfer the coated chicken to a serving platter and garnish with chopped scallions and a sprinkle of white and black sesame seeds.
11. Serve your delicious Sweet and Spicy Korean Fried Chicken immediately, accompanied by steamed rice or your favorite side dishes. Enjoy!
