Grilled Chicken Alfredo Pasta Recipe - Creamy and Flavorful Delight

Ingredients:

For the Marinated Chicken:

  • 3 boneless, skinless chicken breasts
  • 1 tbsp smoked paprika
  • 1/2 tbsp black pepper
  • 1/2 tbsp salt
  • 1/2 tbsp garlic powder
  • 1/2 tbsp dried parsley
  • A pinch of rosemary

For the Pasta:

  • Penne pasta (boiled)

For the Alfredo Sauce:

  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 8 oz milk
  • 1/2 cup heavy cream
  • 3 tbsp cream cheese
  • 1/3 cup mozzarella cheese
  • 1/3 cup Parmesan cheese
  • 1 tbsp red chili flakes (adjust to your spice preference)
  • Salt and pepper to taste
  • 1 tbsp dried parsley
  • 1 tbsp oregano

Instructions:

1. Prepare the Marinated Chicken:

  • In a bowl, combine smoked paprika, black pepper, salt, garlic powder, dried parsley, and a pinch of rosemary.

  • Rub this marinade evenly over the chicken breasts and let them sit for about 15-20 minutes to absorb the flavors.

  • Preheat your grill to medium-high heat.

  • Grill the chicken for about 6-8 minutes per side or until it's cooked through. The internal temperature should reach 165°F (74°C). Remove from the grill and let it rest for a few minutes. Then, slice the chicken into thin strips.

2. Prepare the Alfredo Sauce:

  • In a large skillet, heat the butter over medium heat.

  • Add all-purpose flour and stir continuously to make a smooth roux. Make sure the heat is not too high to avoid browning the roux.

  • Gradually add the milk while stirring constantly to prevent lumps from forming.

  • Add the cream cheese and continue to stir until it's fully incorporated.

  • Pour in the heavy cream and stir continuously until the sauce is smooth and creamy.

  • Add the red chili flakes, salt, pepper, dried parsley, and oregano. Adjust the seasonings to your taste.

  • Add the cooked penne pasta to the skillet with the Alfredo sauce and toss until the pasta is well coated.

  • Sprinkle mozzarella cheese and grated Parmesan cheese over the pasta. Continue to stir until the cheese is melted and the sauce is creamy.

  • Place the sliced grilled chicken on top of the pasta.

  • Garnish the dish with parsley for a fresh burst of flavor.
