Hearty Vegan Oyster Mushroom and Quinoa Stir-Fry Recipe - Nutritious and Flavorful

A delicious and nutritious vegan meal packed with oyster mushrooms, quinoa, bell peppers, 
and sweet chili sauce. This stir-fry is quick and easy to make, and perfect for a healthy 
weeknight dinner.

Ingredients

  • 1 cup quinoa
  • 1 ½ cups oyster mushrooms, sliced
  • 1 bell pepper, sliced
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons oil (such as olive or sesame oil)
  • Salt and pepper to taste
  • Optional garnish: fresh cilantro or green onions

Steps

1. Cook quinoa according to package instructions and set aside.

2. Heat some oil in a large pan or wok over medium heat.

3. Add the oyster mushrooms and bell peppers to the pan and stir-fry for about 5 minutes, 
or until the vegetables are slightly tender.

4. In a small bowl, mix together the sweet chili sauce with a splash of water.

5. Pour the sweet chili sauce mixture over the vegetables in the pan and stir to coat evenly.

6. Add the cooked quinoa to the pan and gently toss everything together until well 
combined.

7. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

8. Serve the stir-fry hot, garnished with some fresh cilantro or green onions, if desired.
