Ingredients:

- 1 large apple, cored and sliced into rings

- 120 g flour (1 cup)

- 1 tsp vanilla or cinnamon

- 1 tsp baking powder

- 1/4 tsp salt

- 175 ml soy milk (3/4 cup)

- 1 tbsp maple syrup

- 1 tbsp vegetable oil


Instructions:


1. Prepare the Apple Rings:

   - Core the apple and slice it into rings. If you have a round cookie cutter, you can use it to create a hole in the center of each apple ring.


2. Prepare the Pancake Batter:

   - In a mixing bowl, whisk together the flour, vanilla or cinnamon, baking powder, and salt.


3. Add Wet Ingredients:

   - Pour in the soy milk, maple syrup, and vegetable oil. Stir the batter until it's smooth and well combined.


4. Heat the Pan:

   - Preheat a non-stick frying pan or griddle over medium heat. Lightly grease it with oil or cooking spray.
