Mediterranean Chicken Skillet: A Flavorful One-Pan Delight

Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 small onion, diced
- 1 cup cherry tomatoes
- 1 bell pepper, thinly sliced
- 1/4 cup black olives, pitted
- Pinch of red pepper flakes
- 1/4 cup white wine
- Salt and pepper, to taste
- 1 teaspoon dried oregano
Steps
Step 2: In a skillet, heat olive oil over medium heat.
Step 3: Season the chicken breasts with salt, pepper, and dried oregano. Sear them in the
skillet until golden brown on both sides. Remove from the skillet and set aside.
Step 4: In the same skillet, add garlic and diced onion. Sauté until translucent.
Step 5: Add cherry tomatoes, sliced bell peppers, black olives, and a pinch of red pepper flakes.
Cook for 5 minutes, until the tomatoes start to burst.
Step 6: Pour in white wine and cook for another 2 minutes to evaporate the alcohol.
Step 7: Return the chicken breasts to the skillet, burying them into the vegetable mixture.
Step 8: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the
chicken is cooked through.
Step 9: Serve the Mediterranean chicken skillet with a side of rice or crusty bread. Enjoy!
