Classic Vanilla Sponge Cake Recipe - Light, Fluffy, and Delicious



Ingredients:

For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup whole milk

For the Frosting (Optional):
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tsp vanilla extract
- 2-4 tablespoons milk

Instructions:

1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set this aside.

3. Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 2-3 minutes.

4. Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Alternate Dry Ingredients and Milk: Gradually add the dry ingredients mixture to the wet ingredients mixture, alternating with the milk. Start and finish with the dry ingredients. Mix until just combined, being careful not to overmix.

6. Divide and Bake: Divide the cake batter equally between the prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

7. Cool: Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and transfer them to a wire rack to cool completely.

8. Frosting (Optional): To make the frosting, beat the softened butter until creamy, then gradually add the powdered sugar and vanilla extract. If the frosting is too thick, you can add milk, one tablespoon at a time, until you reach your desired consistency.

9. Assemble and Decorate: Once the cakes are completely cool, you can spread a layer of frosting on top of one cake layer, place the other cake layer on top, and frost the top and sides of the entire cake. You can decorate the cake with additional frosting, sprinkles, or any other decorations you like.

10. Serve: Slice and serve your delicious homemade cake!
